Yummy Yummy Spring Dishes

Here is a yummy spring meal to go with all of the delicious drinks I posted yesterday.  Please post your favorite spring recipes in the comments below - think light meals with lots of fruits and veggies!  These might not be the healthiest meals, but I tried to not make them too bad ;o) Enjoy!

Grilled Salmon with Pineapple, Mango, and Strawberry Salsa

4 teaspoons olive oil
4 salmon fillets
2 teaspoons Essence (check below)
1 teaspoon salt
1/2 teaspoon black pepper
fruit salsa (recipe below)

Preheat grill to medium.  Brush both sides of salmon with olive oil and season with Essence, salt and pepper.  Cook fish on each side for about three minutes or until cooked.  Add salsa when ready to serve.

Essence:
2.5 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Fruit Salsa:
3/4 cup diced pineapple
3/4 cup diced mango
1/2 cup diced strawberries
1/4 cup diced red onions
1 jalapeno
2 tablespoons chopped mint leaves
2 tablespoons freshly squeezed orange juice
1 tablespoon freshly squeezed lime juice
1/4 teaspoon salt

(allow to sit for 30 minutes before serving on salmon)

3 tablespoons of butter
one bunch of asparagus
3 garlic cloves
Melt butter in skillet over medium heat.  Add garlic and asparagus.  Cook for ten minutes or until asparagus is tender.  Stir occassionaly. 

Scalloped Potatoes

4 cups thinly sliced potatoes (6-8 medium potatoes)
2 tablespoons flower
1 teaspoon salt
1/8 teaspoon pepper
3 tablespoons butter
2 cups scalded milk
2/2 cup shredded cheddar cheese

Place a layer of 1/3 of the potatoes in a 2-qaurt baking dish.  In a small bowl combine flour, pepper and salt.  Sprinkle half of the mixture over first layer of potatoes.  Repeat with second layer of potatoes.  Dot with butter and then pour hot milk over potatoes.  Cover and bake at 375* for 45 minutes.  Sprinkle cheese on top and continue to bake uncovered for 15 minutes.

1 quart fresh strawberries (or more)
1/2 cup sugar
8 ounces softened cream cheese
1 cup powdered sugar
1 container frozen whipped topping
1 angel food cake (cut into cubes)

Cut strawberries in half and mix in sugar.  Chill.  Beat cream cheese and powdered sugar well.  Fold in whipped topping and cake cubes.  Spread mixture/cake in baking pan.  Chill for two hours and then cut into squares to serve (top with strawberries).

  1. I make a delicious, fresh guacamole that makes an awesome topper for chicken, salad...whatever! And of course, it's delicious with some tortilla chips.

    3 Ripe Avocados, Diced
    1 large tomato, diced
    1/2 medium red onion, diced
    1 jalapeno (optional), diced
    1/2 lime
    Pinch of sea salt

    Mix the first three ingredients together in a bowl - you want the avocado to stay cubed, so be gentle.

    Squeeze the half a lime over top. Sprinkle with sea salt to taste.

    Delicious, fresh, healthy. I used it as the "dressing" on my spinach salad yesterday - I added some chicken breast for protein.

    1. YUM! Thanks for the recipe, Erin. I have been OBSESSED with guacamole since last summer. Its full of healthy fats. I'll give this one a try!

  2. Yumm! All of these look so delicious! I think my favourite spring dishes aren't really dishes at all, but fruit smoothies! I love using fresh raspberries and strawberries and making delicious smoothies in my magic bullet. :)
